Baked Alaskan Char with Pineapple Salsa

Arctic Char
1 1/2 -2 pounds of Arctic Char fillet
1tbsp olive oil
salt and pepper to taste

 
Pineapple Salsa
1/2 fresh or equivalent canned pineapple peeled, cored and sliced into 1/2 inch
slices
1 red bell pepper, diced
1 green bell pepper, diced
1/2 red onion, diced
1/2 bunch cilantro, minced
1 tsp Tabasco or other hot sauce
juice of one lemon
juice of one lime


Sear pineapple slices in one layer in skillet over high heat with just enough olive
oil until lightly browned. Dice cooled pineapple and combine with all other
ingredients. Meanwhile rub oil on char and bake in a preheated 450 degree oven
for 6-8 minutes until just cooked through. Serve immediately with salsa.
