1 pound chicken, cooked and diced
Cook chicken and cut into bite-size pieces.
1 cup quinoa, cooked
1 cup garbanzo beans, canned is fine
1 cup red pepper, chopped
1 cup cucumber, chopped
2 cups raw spinach
Mix salad ingredients in a large bowl and add chopped chicken.
8 tsp olive oil
8 tsp
lemon juice
1½ tsp cumin
1 tsp salt
½ tsp pepper
Mix dressing and pour over salad.
