Sausage, Whitebean, and Kale Minestrone

3 tablespoons olive oil
1 large onion – coarsely chopped
1 small green bell pepper –
coarsely chopped
Cook in a large soup pot over moderate heat, stirring, until onion is translucent, about 8 minutes.
2 cloves garlic – minced
Add and cook 1 minute.
3 quarts purified water
1 large potato – peeled and finely
diced
1 cup winter squash – seeded and
finely diced
2 ribs celery – chopped
1 bay leaf

Add to pot. Bring to boil, then reduce heat to moderately low and simmer about 1 hour.

½ lb kale – remove stems and rinse
3 cans small white beans –
drained and rinsed
1 ½ pounds nitrate-free turkey or
chicken sausage - sliced
1 cup canned tomatoes – coarsely
chopped, with juices
2 tablespoons tomato paste
1 teaspoon dried basil
½ teaspoon dried rosemary
1 teaspoon garlic salt
1 ½ teaspoon salt
½ - 1 ½ teaspoon freshly ground
black pepper
½ cup packed fresh parsley -
chopped

Add remaining ingredients, except parsley and simmer for 15 minutes. Add seasonings to taste and stir in parsley just before serving.
Makes 6 servings.

To Complete the Meal – serve with 1 slice
100% Rye Bread and 1 tablespoon butter.
