Spicy Coconut Stew

1 can coconut milk
1 cup water
½ cup chicken broth –preservative free
2 medium yams – peeled and cubed
1 ½ cup mushrooms – trimmed and halved
½ teaspoon salt
1 can water chestnuts
1-2 cloves garlic – minced
1 tablespoon minced ginger
Combine in a large pot and bring to a boil.
1 ½ lbs chicken breast – cubed
½ - 3 teaspoons green curry paste
juice of 1 lime (about 3-4 tbsp)

Lower heat and add these ingredients. Stir well, to blend in curry paste. Cook 10-15 minutes, until vegetables and chicken are done.

2 – 10 oz packages raw spinach – stems removed

Stir in spinach and cook for a few more minutes, until it wilts.
Makes 6 servings.

To Complete the Meal – serve with ½ cup brown rice.
