Cruciferous Salad Recipe

Makes 6 servings | Gluten free and dairy free

Step 1

1 head cauliflower
1 large head broccoli
1 packed cup parsley
2 medium carrots

Step 2

1/3 c dry roasted pumpkin seeds
1/3 c walnuts (or pine nuts)
1 apple (chopped)
¼ c. dried cranberries
1 tsp salt
1 tsp black pepper
¼ c. olive oil
2-3 Tbsp lemon juice (or apple cider vinegar)

Directions:

  1. In a food processor, process cauliflower, broccoli, and parsley into small pieces.  Use shred option for carrots.
  2. In a large bowl mix vegetables with remaining ingredients.
