Dairy free if coconut milk is used in place of sour cream
2 lbs. boneless, skinless chicken breast (cubed) or ground chicken
1 Tbsp olive or avocado oil
1 c. onion, chopped
2 c. green bell pepper, chopped
2 c. red bell pepper, chopped
2 c. cauliflower, chopped
2 c. celery, chopped
2 garlic cloves, minced
1 T. of olive or avocado oil
2 tsp. cumin
1 tsp. oregano
1 tsp. salt
2 – 15 oz. cans cannelloni or northern beans
1 c. chicken broth, preservative free
2 c. of sour cream or for a dairy free substitute, use coconut milk
