Beef and Wild Rice Meatloaf

Makes 6 servings | Gluten free and dairy free

Step 1

1 Tbsp avocado oil
2 c red bell pepper, diced
1 med. onion, diced
3 garlic cloves, minced

Step 2

2 eggs
1 c wild rice, cooked

Step 3

2 pounds ground beef
1 ½ tsp salt
½ tsp pepper
1 ½ tsp dried thyme
½ tsp chipotle pepper powder (optional)

Directions:

  1. Preheat oven to 350 F
  2. Heat a skillet, add avocado oil and sauté bell peppers and onion for 5 minutes. Add garlic and cook for 1 minute more. Set aside to cool.
  3. Beat eggs in a large bowl and add cooled vegetables and wild rice.
  4. Add ground beef and spices and mix to incorporate (careful not to overmix). Place in a 9 x 5 loaf pan and bake for one hour.
