Easy Weeknight Beef Goulash

Makes 4 servings | Gluten free and dairy free

Step 1

1 lb. ground beef

Step 2

2 Tbsp Avocado oil or Ghee (divided)
1 c. onion, diced
2-12 oz bags of shredded cabbage (or slaw mix) OR riced cauliflower
2 tsp garlic, minced (optional)
1 tsp salt
Pepper to taste
1 tsp paprika (optional)

Step 3

2 c. pasta/pizza/tomato sauce (no-sugar added)

Directions:

  1. In a large skillet or Dutch oven heat 1 Tbsp of avocado oil and brown the beef. Remove from the pan and set aside.
  2. To the same pan, add the other 1 Tbsp of oil on med-high and add the diced onion. Cook until translucent, add the garlic, cabbage/cauliflower and cook until wilted.
  3. Return the beef to the pan and add the tomato sauce. Stir until combined. Turn heat to medium-low, cover and let cook for 10 minutes.
