Breakfast Burrito

Makes 1 serving | Gluten free

Step 1

1 tsp. butter
¼ cup red pepper, chopped
¼ cup green pepper, chopped
¼ cup potato, precooked and cubed 

Step 2

2 tsp. butter
2 large eggs, slightly beaten
Sea salt, to taste
Pepper, to taste
Cayenne pepper, optional 

Step 3

¼ cup cottage cheese

Step 4

1 corn tortilla

Step 5

½ cup salsa
¼ avocado, sliced
1 Tbsp. sour cream 

 

Directions:

  1. Sauté step one ingredients in a skillet.
  2. Add step two ingredients to skillet, cooking enough for eggs to briefly set.
  3. Add cottage cheese and continue to cook. Shape mixture into a roll.
  4. Warm corn tortilla and then place egg mixture in center.
  5. Add toppings
