Cajun Beans Recipe


Makes 6 servings | Gluten free and dairy free

Step 1

2 Tbsp oliveo oil
2 c. celery, diced
½ c. onion, chopped
1 c. green bell pepper, chopped
1 c. red bell pepper, chopped

Step 2

1 c. black beans, drained and rinsed
1 c. pinto beans, drained and rinsed
24 oz. chicken (or turkey) breast, cut into 1" pieces
1 c. corn, fresh or frozen
1 c. broth, preservative free
1 clove garlic, minced
1 bay leaf
1 tsp cajun seasoning


  1. Add olive oil to a 2-quart saucepan and saute celery, onion and peppers.
  2. Add the beans, chicken, corn, broth, garlic, bay leaf and cajun seasoning and bring to a boil.
  3. Simmer for 20 minutes.
  4. Serve with 2 Tbsp sour cream or olive oil if you are dairy free.
