Collard Greens Recipe

Makes 6 servings | Gluten free and dairy free

Step 1

1 Tbsp. olive oil or coconut oil
½ lb nitrate-free bacon, diced

Step 2
10 c. collard greens, washed

Step 3

1 small cabbage, washed and thinly sliced
1 tsp apple cider vinegar
salt and pepper to taste
1 jalapeno, diced (optional)

Directions:

  1. In a heavy skillet, saute bacon until done. Keep bacon, along with 2 Tbsp of bacon grease in skillet (add extra olive oil or coconut oil as necessary).
  2. Remove and discard stems and center ribs of collard greens. Stack leaves, roll up and slice thinly. Add collards and saute for 1 hour until tender.
  3. Add cabbage, vinegar, salt, pepper and jalapeno and saute 30 minutes to 1 hour.
