Curry Chicken Cucumber Salad

Makes 2 servings | Gluten free and dairy free

Step 1

2 Tbsp olive oil
1 tsp curry powder 
8 oz cooked chicken breast strips

Step 2

1 c. wild rice (cooked)
¼ c. onion (diced)
1 red bell pepper (sliced into strips)
1 green bell pepper (sliced into strips)
6 c. romaine lettuce
2 c. cucumber (diced)
1 avocado

Directions:

  1. Heat oil in a skillet over medium heat. Add curry powder to hot oil. Add chicken and toss to coat in curry and oil. Set chicken aside.
  2. Reduce heat. using the same skillet, add wild rice, onion and bell peppers. Cook for 2-3 minutes until just heated through.
  3. Arrange romaine on two plates. Spoon 1/2 c. wild rice mixture on top of lettuce. Top with half of the hot chicken, 1 c. of cucumber and 1/2 avocado.
