Apple Cinnamon Pork Roast Recipe

Makes 8 servings | Gluten free and dairy free

Step 1

1 Tbsp avocado oil
2 ½ -3 pound pork roast
1 ½  tsp salt
Pepper to taste
1 medium apple

Step 2

2 tsp chili powder
1 Tbsp cinnamon
2 Tbsp apple cider vinegar
1 med. onion, sliced
¼ c. chicken stock 

  1. Season the pork with salt and pepper. Heat avocado oil in a large skillet over med-high heat and brown the roast on all sides. Core and very thinly slice the apple. Cut slits into roast on all sides. Insert apple slices into slits.
  2. Transfer roast to a slow cooker and sprinkle with cinnamon and chili powder. Pour in vinegar and stock and scatter onion slices around the roast. Cook on low for 6 -8 hours.
