BBQ Chili

Makes 10 servings | Gluten free and dairy free
Adapted from Oh She Glows 

Step 1

1 sweet yellow or white onion
6 celery stalks
2-3 carrots - peeled and chopped
1 green bell pepper – chopped and seeded
2-14 oz. cans diced tomatoes
2 lbs ground beef, venison or turkey 
Garlic, cumin, chili powder, oregano, salt and pepper (to taste)

Step 2

4 c. butternut squash or sweet potato - chopped 
6 oz. can tomato paste
2-4 Tbsp BBQ sauce
Spinach or kalte (optional)

Directions:

  1. Add all ingredients from step 1 to a crock pot. Cook on low for 6-8 hours or on high for 4-6 hours.
  2. Add ingredients from step 2 to the crok pot. Let cook for 1 additional hour.
  3. Top with desired healthy fat (sour cream, guacamole, olives, etc.)
