Chicken Salad Avocado Cups

Makes 2 servings | Gluten free and dairy free

Step 1

1 avocado
1 tsp mayonnaise
1 Tbsp chopped onion or chives to taste
5 oz. cooked or canned chicken (drained)
½ tsp Worcestershire sauce

Directions:

  1. Cut the avocado in half and scoop the middle of both avocado halves into a bowl, leaving a shell of avocado flesh about ¼ inch thick on each half.
  2. Add mayo and onion to the avocado in the bowl and mash together.
  3. Add Chicken and stir to combine. Taste and adjust if needed.
  4. Fill avocado shells with chicken salad and serve.
