Chicken Salad Supreme Recipe

Makes 3 servings | Gluten free and dairy free

Step 1

16 oz. chicken breast (cooked and cubed)
3 hard-boiled eggs (quartered)
1 ½ c. apples or grapes (diced)
¾ c. safflower mayonnaise
1 ½ c. celery (sliced)
1-2 Tbsp lemon juice or vinegar
dash of salt
dash of onion powder


  1. Mix all ingredients in a large bowl.
  2. Serve on a bed of greens.
