Indian Curry Recipe

Indian Curry

Makes 4 servings | Gluten free and dairy free

Step 1

1 Tbsp. coconut oil
2 lbs. chicken thighs

Step 2

1 c. chicken broth
¾ canned coconut milk
2 Tbsp. curry powder

Step 3

6 c. cauliflower (cut into bite-sized pieces)
2 c. sweet potatoes (cubed and cooked)
2 c. green beans (cut into bite-sized pieces)


  1. Melt coconut oil in a large skillet. Brown chicken thighs on both sides. Remove and set aside to cool. Slice chicken.
  2. In the same skillet, add chicken broth, coconut milk and curry powder, Simmer.
  3. Add cauliflower, sweet potatoes and green beans and cook until tender.
  4. Add chicken, mix together and cook until warmed through.
