Makes 6-8 servings | Gluten free and dairy free
1 medium jicama - peeled and thinly sliced
1 red bell pepper - thinly sliced
1 green bell pepper - thinly sliced
1 yellow bell pepper - thinly sliced
1 cucumber - diced
½ c. lime juice
¼ c. olive oil
½ c. fresh cilantro – chopped (optional)
Salt and pepper to taste
Combine all ingredients in a large bowl and let marinate for 1-4 hours.
