Salmon Cakes Recipe



Makes 6 servings as a meal or 12 snack-sized portions
Gluten free

Step 1

3 c. (two 14.5 oz. cans) wild salmon
1 c. cooked wild rice
6 T. heavy cream
2 T. mayonnaise
2 organic eggs
1 tsp. mustard
½ tsp. salt
½ tsp. black pepper or a dash of cayenne pepper
1/3 – ½ c. fresh dill or parsley, chopped

Step 2

½ - 1 T. olive oil
½ c. green bell pepper, diced
½ c. onion, diced


  1. Preheat oven to 350 degrees. Mix together all of the ingredients from step 1 and let stand.
  2. Sauté vegetables from step 2 in olive oil until tender. Mix with salmon mixture.
  3. Place parchment paper on a baking sheet. Spread 1 T. of olive oil on paper. Form 6 patties and place on baking sheet.
  4. Bake in a 350 degree oven for 30-40 minutes (until golden brown and firm).
