Sheet Pan Frittata with Ham, Spinach & Feta

Makes 8 servings | Gluten free 

Step 1

Ham, sliced or in ½" chunks (about 8 ounces)
1 Tbsp olive oil or butter
18 large eggs
½ c. half and half (or almond/coconut milk)
3 scallions, thinly sliced
2 oz. fresh spinach leaves, roughly chopped
Salt and freshly ground black pepper, to taste
8 oz. crumbled feta

Directions:

  1. Preheat the oven to 300 degrees F. Prepare an 18x13-inch sheet pan by coating lightly with olive oil (or butter) and spread the ham pieces in a single layer.
  2. Meanwhile, whisk the eggs, half and half (or almond/coconut milk), green onions, spinach, salt and pepper together in a large bowl.
  3. Pour the egg mixture over the ham and crumble the feta cheese evenly. Place the pan in the oven, being careful not to spill*, and bake until the eggs are just set, about 20 – 25 minutes. *Helpful hint: Place pan on oven rack and then pour egg mix.
  4. Great for breakfast or serve with a salad for lunch or dinner. Freezes well!
