Makes 6 servings | Gluten free
¾ c. heavy cream or coconut milk
1 tsp salt
½ tsp pepper
1-12 oz. package hash browns (thawed)
2 Tbsp butter or olive oil
10 oz. fresh or frozen spinach (thawed)
6 oz. nitrate free sausage links or patties
(thawed, cut up)
½ c. shredded cheese (optional)
Add sausage next. Pour egg mixture over sausage.
Bake 45-55 minutes. Sprinkle shredded cheese over top for last 5 minutes of baking.
