Mediterranean Potato Salad Recipe

Makes 4 one-cup servings | Gluten free and dairy free

Step 1

¼ c. olive oil
1 T. red wine vinegar
½ tsp. dijon mustard
1 tsp. salt

Step 2

2 c. cooked white potato – cut into 2" slices, cooked until slightly tender
3 c. green beans – cut into bite-size pieces, cooked until slightly tender
1 c. red bell pepper – cut into 1" pieces
12 cherry or grape tomatoes


  1. Whisk together ingredients from Step 1 with a fork in a large bowl.
  2. Drain potatoes and stir in dressing while warm. Cool.
  3. Add vegetables to potatoes and mix.
