Turkey Quinoa Salad Recipe



Makes 4 servings | Gluten free and dairy free

Step 1

½ cup quinoa
1 cup water

Step 2

¾ pound turkey breast, cubed
¼ cup green onion, chopped
1 T. olive oil
¼ cup lemon juice
Fresh basil, chopped, to taste
Curry powder to taste


  1. Rinse well, then drain quinoa. Combine in 2 quart saucepan, bring to boil then simmer uncovered for 15-20 minutes or until all the water is absorbed.
  2. Combine cooled quinoa in large bowl with ingredients from step 2. Refrigerate for 1-2 hours to allow blending of flavors.
  3. When ready to serve, divide mixture and spoon onto 4 leaves of lettuce for garnish.
