Brussels Sprout Breakfast Hash

Makes 4 servings | Gluten free and dairy free

Step 1

1 lb nitrate-free bacon

Step 2

2 c. red or sweet potatoes (cut into ¼" cubes)
½ tsp salt
Pepper to taste
1 c. onion, chopped

Step 3

1 ½ lbs of shaved Brussels sprouts (can substitute 5 c. riced cauliflower)


  1. In a large skillet, cook the bacon over medium heat. Remove, chop and set aside.
  2. Spoon out all but 2 Tbsp of fat from the pan (add avocado oil if necessary) and add the potatoes, salt and pepper.  Cook for 3 - 4 minutes on medium-high heat, until starting to brown, then add onions and cook for 2 more minutes.
  3. Add the shaved Brussels sprouts and cook until they are tender (3 - 4 minutes).  Return the bacon to the pan and stir to mix.
* To make this a balanced meal, add in a little more protein: 2 fried eggs, 2 turkey breakfast sausage, or a leftover protein from dinner the night before
