Healthy Chicken Nuggets Recipe
Makes 7 servings as a meal or 14 snack-sized portions
Gluten free and dairy free
1 c. almond meal or 96 almonds
1 tsp. poultry seasoning
½ tsp. salt
1 lb. chicken breasts
1 egg, beaten
- Preheat oven to 350 degrees. Grind almonds if using whole.
- Mix ingredients with almond meal.
- Cut chicken into 28 nuggets, dip in beaten egg, and coat with almond meal.
- Bake nuggets on an oiled cooking sheet for 20-30 minutes, turning nuggets once.
