Sweet Potato Casserole

Makes 8 servings | Gluten free 

Step 1

4 c. hot mashed sweet potatoes
2 Tbsp butter
2 eggs
¼ c. cream or coconut milk

Step 2

¼ c. chopped pecans
¼ c. unsweetened coconut
2 Tbsp coconut flour
2 Tbsp butter, melted


  1. Mix the mashed sweet potatoes, butter and eggs together.
  2. Beat in ¼ c. of cream or coconut milk.
  3. Pour mixture into a 2-quart casserole dish.
  4. Combine all topping ingredients and place on top of the sweet potato mixture.
  5. Bake at 350 degrees for 35-40 minutes.

Serving size is ½ cup.
