Mango-Lime Dole Whip

Makes 2 servings | Gluten free and dairy free

Step 1

½ c. full-fat coconut milk
1 c. frozen mango chunks
Zest and juice of ½ lime



  1. Place all the ingredients into a blender and process until smooth.
  2. Serve immediately or freeze in small cups, then leave at room temperature for 10 minutes before enjoying.

*For a fun variation, pour your coconut milk into a small saucepan, heat to a gentle simmer and remove from the burner. Steep 1 Tbsp of herbs [leaves & stems] like fresh mint, thyme or even rosemary, covered for about 15 minutes. Remove the herbs and chill the milk for at least an hour.  The milk will take on those herbaceous flavors and be wonderfully refreshing.
